Sardines Baked in Vine Leaves by Lokanta

approximately;
1200 g fresh sardines cleaned, boned and halved
16 vine leaves
15 cherry tomatoes
20 black olives
2 spring onions
10 dessert spoons olive oil
lemon zest
salt & pepper
preheat oven to 220 degrees
soak/wash the vine leaves well to remove any excess salt/preserving vinegar
line a large oven tray with the wet vine leaves making sure there are no gaps
drizzle the vine leaves with olive oil
arrange the sardines closely side by side, skin side down on top of the vine leaves
cut the tomatoes in half, remove stones from the olives and finely chop the spring onions including the green leafy part; scatter these on top of the sardines
season with salt and pepper and a little lemon zest drizzle the remaining olive oil over the top
cook at the top of preheated oven for approximately six minutes
lift from underneath the leaves to serve
