Wed 28th Apr 10 Food Review: Nirmals, 189 Glossop Road

Next Wednesday Nirmal and Parshotam Gupta enter their 30th year running their Indian restaurant, Nirmals, on Glossop Road, Sheffield. Now that's an awful lot of poppadoms.
They and their restaurant are an institution. Others may have followed and blazed different trails but they were one of the first.
If you don't believe it, look at the walls with framed reviews and articles through three decades. "Devotees crowd into her simple little place," murmurs the Sunday Times Magazine from way back when.
"Curry on as Nirmal," says a witty headline on another. And, if I may be so modest as to mention it, there are some of mine as well

Copthorne head chef springs into new menu launch

Sheffield diners can look forward to a taste of spring on the menu at the 18Fifty5 restaurant at the Copthorne Hotel Sheffield.

Ernst Van Zyl, the recently appointed Head Chef, has created a seasonal menu reflecting the Copthorne’s award winning 18Fifty5 restaurant’s reputation for culinary flair at reasonable prices.

Starters on the new spring menu include pan-fried smoked breast of wood pigeon with beetroot sponge, mini pie of confit leg & watercress; Pastrami of duck breast with a purée of pickled pears; a consommé of spring vegetables with flat leaf parsley & truffle oil and seared king scallops with pressed terrine of pork, celeriac & a caper & lemon confit salsa.

To follow, main courses include grilled fillet of seabass with a lobster & spring onion risotto, baby gem lettuce & a lobster & basil sauce;
Pan-fried rump with turnip purée, boulangère potato, caramelised baby onions & a caper & anchovy jus; ragout of turnip & oyster mushrooms with a gruyere beignet and tournedos of beef with chicken liver parfait, toasted homemade horseradish & black truffle brioche with red wine jus.

The delicious menu is completed with a selection of desserts including baked malva pudding with soaked dried apricots, rooibos tea sorbet & a ginger gel; tasting of rhubarb as carpaccio, sorbet, jelly & dried; roasted pear with coriander seed crème brûlée, goats milk ice cream & muscovado & rum jelly and bitter chocolate fondant with a cumin caramel centre, pistachio brittle & frozen cardamom yoghurt.

With more than a decade’s hospitality experience, South African born Ernst has worked in the kitchens of many high profile AA Rosetted restaurants, including the five star Hilton Hotel on Park Lane, London. He joins the Copthorne from Prima Hotels, where he was the executive chef for six hotels across the UK.

Ernst said; “I’ve been looking forward to putting my stamp on a new menu and have been monitoring what works well since I began at the Copthorne earlier this year. The new dishes I’ve created for the spring menu show my passion for fresh, high quality ingredients and interesting flavour combinations.

“We like to produce plates of great looking food, but still at an affordable price. 18Fifty5 has developed a loyal customer base now so it’s important we keep standards high and guests coming back for more.”

Wed 21st Apr 10 Owners of award winning Sheffield gastro pub to launch new wine bar

Owners of the award winning gastro pub, The Milestone, have announced plans to launch a new venture in the increasingly popular Kelham Island area of Sheffield in summer 2010.
The Milestone owners Matt Bigland and Marc Sheldon will open the new premises, called Slave to the Vine, in close proximity to The Milestone, which will include a wine bar, an independent wine shop and cookery school. The launch of the new wine bar is scheduled for summer 2010 and plans are in place to create a concept that will complement their original establishment in the thriving Kelham Island area.
Matt Bigland owner of the Milestone said “We are extremely excited to announce the opening of our next establishment, which is the first stage of our ongoing development plans. “We launched The Milestone in 2007 and now that it is firmly established as a destination venue in Sheffield for eating and drinking, this is the natural next step. We’re confident it’s the right time to bring a complimentary venue to the area and one that our current guests, as well as new ones, will enjoy.”
Marc Sheldon added, “As well as a wine bar the new venture will be home to our independent wine shop and our increasing popular cooking school. “We already deliver an extremely popular programme of classes through the Milestone Cookery School which is always oversubscribed and the new venue gives us a permanent base for the school and flexibility to deliver more classes. “We also plan to sell a considered selection of quality wines in the wine shop – many of which will also be available to customers drinking in the new wine bar.”
The announcement to launch this second and related venture follows a successful 2009 for The Milestone team who were awarded a prestigious Michelin-recommendation in the Michelin Guide to Eating out in Pubs 2010 and won the award for Best Restaurant at the eatSheffield Awards 2009.
