Mon 30th Aug 10 La Tomatina Festival @ La Tasca Ecclesall Rd, 26th-30th August
Dear La Tasca Fans,
La Tomatina Festival this Bank Holiday Weekend!
La Tasca Ecclesall Road
The Spanish really know how to throw a party, and to celebrate the world famous ‘Tomatina’ festival in Valencia, we are bringing a fun filled weekend of tomato inspired food, drink and fund raising activity to Sheffield this august bank holiday!
The whole aim of the festival is to have some good old family fun and to raise as much money as possible for our local hospice, St Luke’s.
Kicking off on Thursday 26th August with live music from our ever popular DJ’s Swank n Jams, we will be serving tomato inspired tapas, cocktails and sangrias, as well as offering a 50% off tapas discount to our diners on selected days over the whole weekend, as well as running our ever popular lunch menu and ‘tapas for a tenner’ promotion on the Sunday.
The tomato fun doesn’t stop there though… Saturday and Sunday will see us taking our tomato escapades onto the streets with live music from Sheffield’s finest feel-good quartet, Gemolade! We will have a tomato bath on our terrace which, if you feel brave enough, you can take a dip in and help raise much needed funds for St Luke’s hospice, or stand by and admire our crazy staff and friends taking the tomato plunge!
With face painting for the kids, fun kids games and ‘splat the parent’ happening, it promises to be a fun (if a bit messy), family day out. Kids (and parents) are welcome to come in tomato fancy dress, and we will be giving a free meal to the family with the best little cherry tomatoes in tow on the Saturday and the Sunday.
We would love to see all our local community, regulars and database members enjoying our fiesta weekend this bank holiday and hope to raise £1000 for St Luke’s Hospice.
If you would like to get involved with any of the fundraising please contact us for a sponsorship form and more info on our weekend activity, or if you would like to book a table, please give us a call, drop us an email, or attend the event on face book to reserve your place on the night.
Kind regards and HASTA PRONTO!!

Wed 18th Aug 10 Food Review: Mish Mash
RESTAURANTS are like people. You see them once, make a judgement and that stays with you. And so it was with me and Mish Mash. Whenever I wandered by the place on Ecclesall Road a few little words popped into my head: pricy, scorched food, cramped. Well, I take it all back...
...It's lately had a facelift. The diorama of the Peak District along one side has gone and the walls are painted white (with local paintings by Dave Akehurst) so this makes the place look wider. It also helped that it was nearly empty on a World Cup Wednesday. One of the original partners has gone, leaving Sam Cole with the same chef, Joe Grayson. And he cooked a blinder

Mon 19th Jul 10 Restaurant Review: Hong Kong Wok
Talented teamwok
Date: 14 July 2010
ONE young Sheffielder has found the ideal answer to what to do after returning from her gap year travels – she set up her own restaurant… Alice Chan, who is 26, spent seven months travelling in south-east Asia when she couldn't find a job after university. She was going to work for her dad, who has his own business selling specialist Chinese cookers, on her return but he suggested the restaurant idea.
So she has just opened Hong Kong Wok in what was the Vietnamese Noodle Bar on London Road with her business partner, veteran chef Sifu Hung Chan.
Alice said: "I've gone into business with my head chef. This is my first restaurant; I've never managed a restaurant before. It's a bit of a challenge but Sifu is a renowned Chinese chef in Sheffield."
Sifu, who used to work at the neighbouring Noodle Inn and has worked in his native Hong Kong and Spain, has a loyal following in the Chinese community. Alice said that they received 52 good luck bouquets when they opened recently – and most were for Sifu.
They have been hard at work getting the design of the restaurant right and finding the right staff and for the moment have a one-page taster menu to see what is popular. Later on they will look at introducing specials and dim sum

Wed 14th Jul 10 The 13th Annual Skills for Chefs Conference
The 13th Annual Skills for Chefs conference took place at The University of Sheffield on 5-6 July, with some the country’s elite chefs sharing their skills, knowledge and experience with two hundred delegates.
Many of the delegates have attended the conference several times and this year they rated the business programme to be one of the best ever!
The key note address was delivered by Catherine Gazzoli, CEO of Slow Food UK, the organisation which promotes the enjoyment and protection of locally-produced food products and regional cooking. Catherine encouraged chefs to embrace the philosophy of the movement by using food which fully respects the environment, human health and animal welfare.
The key focus of the conference was the fully equipped kitchen specially built by Falcon to bring out the best in the chef skills on display. The first chef to hit the demo kitchen was Atul Kochhar chef patron of the acclaimed Indian restaurant Benares in London’s Mayfair. Atul was the first Indian chef to achieve a Michelin Star and he cooked several dishes including “Murg Tariwala-a traditional chicken curry from Northern India, “Spiced Chicken Livers” and “John Dory with Roasted Tomatoes”.
Atul advised chefs to use spices in just the same way as they would season with salt and pepper and they should be added as part of the seasoning balance.
“Don’t be scared of spices,” he said “nothing is forbidden, but ease up on the chilli – you shouldn’t be trying to prove something by adding quantities of chilli.”
After a Tapas Style lunch the delegates were treated to a sensational demonstration from Claude Bosi. With great clarity and passion Claude presented three dishes with delegates appreciating the talents of the two Michelin starred chef. Claude explained that he created his menu at Hibiscus based on seasonal availability and he explained the benefits of using water baths and liquid nitrogen in his dishes. A dish of “Mackerel with three varieties of Wild Strawberries” was just one of the fascinating dishes he presented.
After Claude the conference took a different route and delegates benefitted from a detailed presentation on banqueting techniques from Andrew Bennett MBE, Director of Food and Beverage at The Sheraton Park Lane Hotel. Andrew stressed the benefits of slow cooking meat in order that all guests could enjoy perfectly cooked dishes. In addition he explained that chefs should put special diets on the top of the agenda and ensure that the same thought and passion should be interested in their creation. Andrew commented “guests who need special diets are paying the same price so how would you feel if the food was second rate!” This engaging session did not miss the opportunity to make use of the kitchen and delegates were treated to a demonstration on banqueting desserts by Sarah Hartnett also from the Sheraton Park Lane who was also recently crowned “Pastry Chef of The Year” by The Craft Guild of Chefs.
The first day of the conference was brought to a conclusion by a humorous presentation by rising culinary star Glynn Purnell, twice winner of TV's Great British Menu. The Michelin Starred chef presented two signature dishes and these were “Poached Egg Yolk with Smoked Haddock Milk Foam -Cornflakes and Curry Oil” and “Brill poached in Coconut Milk, Toffee and Cumin Carrots with Passion Fruit, Carrot Vinaigrette”.
Glynn explained that the ideas for his dishes often came from his childhood and the cooking of his mother. It was clear to see why Glynn has been instrumental in putting Birmingham on the culinary map.
In the evening delegates enjoyed a five course conference dinner and Martin Carabott from The Gleneagles Resort was announced as the winner of The Skills for Chefs Competition held earlier in the day at Sheffield College.
Martin made great use of the ingredients provided and made every minute of the one hour allocated to produce a superb dish of "Slow-cooked Blythburgh Pork Fillet, California Prunes and Armagnac Jus". Andrew Bennett MBE, Chair of Judges commented "Martin used modern techniques to great effect to produce a perfectly cooked piece of pork; he was a credit to his mentor Scott Scorer at Gleneagles".
The first session on the second day of the conference was a session by Graham Hornigold, Chef Pâtissier at The Mandarin Oriental, Hyde Park. Graham explained that a dessert course does not have to be very sweet. Graham emphasised this point by creating “Apple Risotto with Celery and Apple Rémoulade, Candied Pecans and Vanilla Mascarpone Sorbet”.
Next up was Theo Randall who applauded the conference for providing an induction system for cooking. For more than 10 years, Theo was Head Chef and partner at The River Café, where under his direction; it won its first Michelin star. Theo Randall now operates his own restaurant at The InterContinental in Park Lane, London and he shared the secrets of his Italian influenced cuisine with the conference. His dishes included “Pan-fried Scallops with White Polenta”, “Italian Fish Stew” and Spatchcock Pigeon Roasted on Bruschetta with Porcini, Pancetta and Swiss chard”.
The conference then welcomed Steven Doherty a culinary legend to the stage.
Steven became the first ever British Head Chef of a Three Star Michelin Restaurant when he worked at Le Gavroche.Steven focused on the importance of making money and staying in business. His demonstration showed how great dishes like “Boned and Rolled Stuffed Saddle of Rabbit” would generate excellent profit margins.
After a traditional Yorkshire Lunch of Roast Pork the conference was treated to a passionate and enthusiastic presentation from Giorgio Locatelli. Giorgio explained in great detail how chefs could cook the perfect risotto and how the consistency can vary throughout Italy. His own dish of “Risotto with Barelo Wine and Castelmagno Cheese” had delegates rushing from their seats to sample the perfectly cooked dish with fantastic flavours. Giorgio followed this with a dish of “Sea Bass cooked in Salt Crust with Herbs” and once again the dish presented perfectly with the addition of aged balsamic vinegar valued at £30 for a very tiny bottle! Giorgio brought two of his chefs with him to the conference and his pastry chef demonstrated how to prepare the classic “Pasteria Naplotina” and in advance he had prepared 200 portions so everyone could enjoy this mouth watering dessert. Many of the delegates enthused by Giorgio made a note of his restaurant “Locanda Locatelli” on Seymour St., London.
The final conference business programme was by Mark Hix who had been crowned “Catey Chef of the Year” the previous evening. Mark was well known as Executive Head Chef for Caprice Holdings Limited overseeing both Le Caprice and The Ivy.
However, after 17 years to concentrate on his own projects. In 2008 Mark opened the much anticipated restaurant ‘Hix Oyster and Chop House’ in Smithfield which was nominated in three categories at the London Restaurant Awards.
Mark produced several dishes from his new book including Lamb Cutlets with Cucumber and Mint” and “Red Mullet on Toast”.
David McKown, Conference Director brought the formal business programme to a conclusion by thanking all the delegates and sponsors for making the Skills for Conference 2010 a great success.

Thu 1st Jul 10 Copthorne takes a fresh look at summer
Temperatures may be rising but the award-winning 18Fifty5 restaurant at Sheffield’s Copthorne Hotel is keeping it cool with the launch of a new summer menu with daring flavour combinations.
The multi award-winning 18Fifty5, most recently titled Best Newcomer at the Westside Sheffield Restaurant Awards, has used seasonal produce in its adventurous summer dishes, whilst maintaining the restaurant’s reasonable prices.
Starters include poached and roasted breast of wood pigeon with Yorkshire rhubarb, a rillette of the leg and a raspberry brioche; and butter poached lobster tail and claw with watermelon, avocado, carrot & bread wafers.
To follow, main courses include black olive oil poached monkfish tail with courgette,
tomato, couscous, cucumber & basil sauce vierge; roasted best end of “Devonshire Estate” lamb with fennel, orange, potato bundles and lavender jus; and red pepper cannelloni with ratatouille, watercress pesto, rosemary & green olive focaccia.
The summer scorcher is completed with a selection of desserts including strawberries as jam, granite, diced, sorbet, dried and juice with balsamic & black pepper; bitter chocolate pavé with apricot, ginger & goats milk; and elderflower parfait with pistachio & lemon.
Head Chef Ernst Van Zyl, who has worked in many high profile AA Rosetted restaurants including the five-star Hilton Hotel on Park Lane, London, created the menu to demonstrate his passion for adventurous flavour combinations, while keeping the menu light and fresh.
Ernst said: “This menu looks great on the plate as it uses high quality produce, but still remains at an affordable price. As it’s summer I’ve used light ingredients to keep diners cool and full of life and meals include some interesting taste sensations for the adventurous eater.
“The seasonal and very much British ingredients will take people back to nature and I’m sure they will all be dreaming of tropical climates once they have finished their meals, whatever happens with the British weather!”

Sheffield’s Newest ‘Gastro-Café’ Sets New Food Standard
Sheffield recently welcomed a new addition to its already diverse restaurant scene in the form of, Made By Jonty, which aims to champion good quality wholesome food – one of its salad boxes provide three of your five-a-day. Jonty Cork, the owner and chef at Made By Jonty, likes to describe his new venture as a ‘gastro-café’; the café side reflects the simplicity and down-to-earth nature of Made By Jonty, while the gastro side reflects its intentions to provide restaurant quality food along competent service.
Jonty has a wealth of experience in the restaurant/food trade. He has worked as a chef at various quality establishments in London including Tom Conran’s Lucky Sevens and Tom’s Deli, and the Atlantic Bar and Grill for Oliver Peyton. In Sheffield, for four years Jonty worked at West 10, which won ‘Best Wine Bar/Bistro’ award twice during that time. And before setting up his own business, Jonty was at Silversmith’s which again won a ‘Best Restaurant’ award when he was working here.
Jonty Cork, owner and chef of Made By Jonty says; “I’ve always wanted my own café and with the opening of Made By Jonty it’s a real dream come true. Our aim is to provide a relaxed café environment whilst serving up home cooked seasonal healthy food. One of the main things we do are the large salad bowls which are laid out on the counter as you walk in, they’re freshly made, full of flavour and very healthy – they’re three of your five-a-day!”
The food on offer at Made By Jonty includes breakfast which can be made to order, lunch which uses only local seasonal produce, and of course the salad bar. The simple décor mirrors its tranquil nature, and there’s an underlining deckchair stripes theme which can be seen on the seats and on the waiting staffs’ aprons.

Tue 25th May 10 The Sheffield Tap
Yorkshire pub guide: The Sheffield Tap, Sheffield. Source: the Telegrqaph
The Sheffield Tap, Sheffield, is a picture of elegance on Platform One at Sheffield station.
Given that the recently opened Tap is slap-bang on Platform One at Sheffield station, you'd expect it to have the ambience of a bus shelter. I imagined commuters nipping in for a quick half before the 6.15pm to Leeds or business types opting for a swift meet over coffee. Or, at a push, the modern equivalents of Celia Johnson and Trevor Howard grabbing an anonymous moment before returning to their spouses.
Not so. When I popped in on a Friday afternoon, it was heaving with all manner of folk settling down for a glass or two. Many, I suspect, weren't even travelling. In one corner, several young lads enjoyed a pre-weekend pint and in another a well-fed but fashionable chap contemplated a tall glass of Czech lager. At the bar, you can see why trade is good. A plethora of hand pumps and beer taps offers at least four ales from local brewery Thornbridge, plus four guests that might include beers from Dark Star, Marble or Moor. Lager lovers are not ignored, with a peerless selection from Czech brewery Bernard and other excellent world breweries.

Tue 25th May 10 Restaurant review: Milestone in Sheffield
Already a favourite with the locals, Milestone in Sheffield is worth discovering for yourself
...And so to the Milestone Bar and Restaurant, which is hidden away in a defiantly ungussied-up corner of Sheffield full of glowering old mill buildings, many of the windows long ago knocked out to leave angles of glass. Inside the Milestone, there is an elegant rough-hewn look. It's all dark, gnarly wood and clean lines. In the bar they serve things like ox liver with barley and pancetta or 20oz panhandle steaks, which sound like aggressive clinical treatments for chronic anaemia. Upstairs, in a vaulted room of beams and shadows, is the more ambitious restaurant, where we ate. All of it shouts heft and animal fats. That said, it is curiously unfixed in geography: I could imagine this dining room being anywhere in Scandinavia or Canada or those parts of the US where they still speak with a Norwegian twang. It felt comfortingly Saxon – Anglo or otherwise.
But then I was probably always going to love a place which serves, as a canapé, a shard of its own cured bacon cooked to a crisp, with a dollop of tapenade and a curl of roasted pepper. They do love their pigs at the Milestone,

Tue 25th May 10 A Gardener's Delight! new menu at the Milestone
A Gardener's Delight in the Restaurant
Our talented Head Chef James Wallis has created an inspired spring menu to set apart our fine dining restaurant.
Based on a theme of 'A Gardener's Delight' the dishes take diners on a journey through a spring garden.
James commented; "The menu is created with seasonality in mind and the idea of strolling down a garden path and enjoying the sights, sounds and tastes of spring. Each of the dishes bring this concept to life."
The philosophy of the restaurant is to offer modern interpretations of classic food, produced using complex cooking techniques and the finest ingredients. This is fine dining at its best.

Thu 20th May 10 Changes at the Walnut Club & Walnut Live!
Respected chef Christian Szurko has taken over the management of the Walnut Club brand in Sheffield and Hathersage.
As operations director, Christian has drafted in new blood in the kitchens and front-of-house at the Walnut Club Live on Ecclesall Road and the Walnut Club Brasserie in Hathersage.
The chef’s CV includes Langan’s Brasserie and The Ivy in London and Sheffield’s Blue Room Brasserie. Latterly he has been running Hillsborough and Sharrowvale fishmonger Manns with brother and fellow chef Danny.
While continuing to operate Manns, the brothers have now returned to the kitchen in a move aimed at revitalising the two Walnut Club outlets.
“They are both high-quality venues, but it’s a very competitive market out there. We have completely revised the menus to offer affordable classic food, with more specials,” says Christian. Choices include two courses for £11.95 or three for £16.95, with Sunday roasts for £9.95.
Managing the Ecclesall Road venue is Chris Barradale, brother of Arctic Monkeys manager Geoff, with Craig Macfarlane as front-of-house manager at Hathersage.
Joining the Szurkos in the kitchen are chefs Iklat Hussain, formerly of Marco@Milano’s, and Richard Butler from Loch Fyne.
“The music and cabaret nights at Walnut Live are becoming more and more popular and the food seems to be going down well,” says Christian.
Meanwhile, new lunchtime and evening menus are to be introduced at Hathersage by the end of the month, continuing the policy of providing good food at very keen prices.
“People who think about going to the pub for value should give us a try – we believe we’re even more competitive,” he adds.
“We want people to know they can rely on us for good food and service, whether in Sheffield or Hathersage, and we’re asking for as much feedback as possible. We’re not afraid of criticism.”

Wed 5th May 10 New talent at El Toro
El Toro has just enlisted the very talented Louise Louix as pastry chef.
Prior to working at El Toro Louise worked as a Product Developer for Marks & Spencer for 6 years; this was proceeded by a two year stint at Guy Savoy’s 3 Michelin Star restaurant in Paris and time in the kitchens at both The Lanesborough and Claridges hotels in London.
Not wanting to cook haute cuisine but cakes and desserts that everyone wants to eat, Louise has set about making chocolate brownie’s, giant meringues (see picture, left) with strawberry or hazelnut served with fresh cream and fruit, cup cakes with vanilla and raspberry or classic victoria sponge, perfect with a pot of tea and a chat.
David Neville, owner of El Toro said ‘I worked with Louise for Marks & Spencer and she could pretty much choose to work anywhere, but what I offered was a open brief to make the type of cakes she loves to eat with her kids or friends while having a pot of tea or glass of wine.'

Wed 28th Apr 10 Food Review: Nirmals, 189 Glossop Road
Next Wednesday Nirmal and Parshotam Gupta enter their 30th year running their Indian restaurant, Nirmals, on Glossop Road, Sheffield. Now that's an awful lot of poppadoms.
They and their restaurant are an institution. Others may have followed and blazed different trails but they were one of the first.
If you don't believe it, look at the walls with framed reviews and articles through three decades. "Devotees crowd into her simple little place," murmurs the Sunday Times Magazine from way back when.
"Curry on as Nirmal," says a witty headline on another. And, if I may be so modest as to mention it, there are some of mine as well

Matt Bigland owner of the Milestone said “We are extremely excited to announce the opening of our next establishment, which is the first stage of our ongoing development plans. “We launched The Milestone in 2007 and now that it is firmly established as a destination venue in Sheffield for eating and drinking, this is the natural next step. We’re confident it’s the right time to bring a complimentary venue to the area and one that our current guests, as well as new ones, will enjoy.”
Marc Sheldon added, “As well as a wine bar the new venture will be home to our independent wine shop and our increasing popular cooking school. “We already deliver an extremely popular programme of classes through the Milestone Cookery School which is always oversubscribed and the new venue gives us a permanent base for the school and flexibility to deliver more classes. “We also plan to sell a considered selection of quality wines in the wine shop – many of which will also be available to customers drinking in the new wine bar.”

Tue 23rd Mar 10 'Our love affair with home-grown ingredients is killing innovation in our restaurants'
I'm flying over Russia with Air New Zealand, travelling from Hong Kong, having just had a lovely meal of passion fruit and vodka-cured salmon, followed by braised beef short rib with garlic mash, and a blueberry almond cake.
The dishes are delicious – and exactly what we consider to be a perfectly acceptable meal these days. What I mean by this is that even though it's a mixture of styles, with ingredients from all around the world, it is, simply, food. Yet it is certain kinds of food like this that seem to upset so many chefs and critics. Increasingly, the prime concern is not how well cooked or sourced the ingredients are, but the provenance of the ingredients and the nationality of the person cooking them.
It appears to me that we are now closing culinary ranks in Britain, deciding what we are prepared to accept and what is unacceptable. I have a sense of a growing tide of culinary xenophobia. I'd hazard a guess and suggest that a lot of British chefs and the foodie media are trying desperately to establish a nationalistic culinary legacy such as most European nations (and those from Turkey to Thailand) have had for centuries. And to do this, they have unconsciously set boundaries and rules which say that in this new wave of so-called Britishness, a chef must not experiment by mixing foreign ingredients – at the risk of exclusion from a secret gastronomic club to which so many chefs aspire.

Tue 23rd Mar 10 Conform or close, head of food agency tells dirty cafés
The new head of a Government agency has warned that food businesses which refuse to conform to a voluntary scheme on hygiene ratings will be closed down by repeated visits from health inspectors. In candid comments to The Independent, Lord Rooker, chairman of the Food Standards Agency, said any pub, café, hotel, restaurant and takeaway not openly displaying its rating under the "scores on the doors" system faced weekly official visits. Rebel firms would have to pay for environmental health inspections themselves, the former Labour minister added, warning they would "go out of business pretty damn quick".
Two-thirds of local authorities in England, 219, currently publish 0- to 5-star hygiene ratings on more than 100,000 outlets on websites available for public scrutiny, and the FSA has spent four years developing its own UK-wide scheme with the aim of reducing the 750,000 people hit by food poisoning every year.
In an interview to mark the first 10 years of the FSA – which he helped found as a minister in the former Ministry of Agriculture in 2000 – Lord Rooker said that all outlets would want to join a national scheme eventually accepted by council and industry bodies.
Asked why dirty premises would want to display low scores, he said: "When we get to that point, they will get inspected every week and charged for it. They will be out of business pretty damn quick, because the regulations will put them out [of business].

Sun 7th Mar 10 Taste of the Deep South set to take Sheffield by storm
Sheffield is set to experience the authentic BBQ taste of North Carolina as a flagship fast food restaurant prepares to open in the City.
The Original BBQ Grill and Rib Shack Company will open their first outlet on Sunday 7th March in the Oasis Food Court on the lower mall at Meadowhall Shopping Centre.
The Company was founded by two Sheffield born food enthusiasts, Philip Betts and Steve Palmer-Smith, who have a lifetime of experience in the food industry. The pair have a passion for all things BBQ and they believe that the combination of slow cooked meat and the finest BBQ sauce direct from the USA will prove irresistible to diners.
The menu at The Original BBQ Grill and Rib Shack Company includes full and half racks of BBQ Pork ribs, pork hammers, lamb ribs, pulled pork sandwich, Louisiana pulled beef sandwich, Cajun chicken shack wrap, BBQ chicken wings and beef steak sandwich. Two innovative salads are also available including an iceberg wedge accompanied with ranch dressing and bacon as well as a selection of side orders.
Philip Betts, Joint Managing Director, said: “The origins of The Original BBQ Grill and Rib Shack Company lie in Mobile, Alabama where Steve and I were introduced to the Deep South culinary traditions of BBQ excellence. This method of cooking is taken very seriously indeed here and it is incredibly inspiring.
“The perception of BBQ in the UK is very different story, it’s all about charcoaled sausages which are burnt on the outside and not cooked on the inside – we are here to change all that!
“All our meat has been slow cooked for three and a half hours and is tender and exceptionally tasty. We are very passionate about bringing the culinary tradition and true taste of BBQ to the UK and are proud to have chosen Meadowhall, the region’s premier shopping destination, as the location to launch our flagship outlet with our ‘ribs on the go’ concept.
Steve Palmer-Smith, Joint Managing Director, added: “With the launch of The Original BBQ Grill and Rib Shack Company we are introducing a unique, authentic concept to the quick service restaurant market and are very confident that it will be well received by our customers.
“We are holding an exclusive VIP launch event on Saturday night, where more than 75 invited guests will get the chance to sample the menu for the first time and we very much looking forward to opening for business on Sunday 7th.
“There is no other restaurant like ours out there and we see our Sheffield restaurant as this the first of many. We are definitely up for the challenge of educating every single one of our customers to enable them to experience the taste of true BBQ – Rib Shack style!

Wed 3rd Mar 10 A critic bites: John Walsh reveals what marks a good eaterie from a bad one
Waiters who know their onions but sense when to hold off, simple decor and a good bread basket...
10 Things That Make a Good Restaurant
1. The light fantastic...tastes better and wine floods your senses more spectacularly when there are windows around. I can't explain why...
2. Simplicity. Restaurants used to be shrines to immaculate taste. You could have peeped into the dining rooms of the Ritz or the Savoy any time from the 1910s to 2000 and seen the same white damask napery, cut glass, burnished silver serving dishes, opulent creamy drapes, Sabatier cutlery... Today, we suspect eating houses that come on like shrines. Simple décor is best...
3. A bit of a buzz. Restaurant reviewers award points for "ambience", and every habitual diner-out knows the value of a little noise with your meal. I don't mean the effortful badinage of theatrical Italians in upscale trattorias. I mean some good music (a bit of The Killers, a soupcon of KD Lang, a touch of Mumford & Sons) played quietly and unobtrusively, and a buzz of easy conversation, the kind conducted by people who know they aren't being overheard...

Wed 24th Feb 10 Food Glorious Food: 20 March – 28 November 2010
Food Glorious Food: 20 March – 28 November 2010
From grow your own to celebrity chefs, school dinners to Sunday roasts – a new family-friendly exhibition at Weston Park will take a look at food’s place at the heart of British culture. Curated by Museums Sheffield, Food Glorious Food will explore our relationship with all things edible to tell the stories that lie behind what we choose to eat.
Food – how we grow it, prepare it and eat it – is at the very heart of our society. What we eat, when, and who we share it with reflects who we are and forms a large part of our daily lives. Working in partnership with the University of Sheffield, Museums Sheffield has drawn on The British Library’s vast oral history archive and interviews with people from across the region to look at what’s gone from our farms, into our shopping trolleys and onto our plates over the last fifty years. From the influence of rationing, through the post-war expansion of world flavours, to our present crusade against fast food and focus on nutrition, this new interactive exhibition will show how the nation’s changing relationship with food has reflected the concerns of the age.
Exploring the journey from field to fork, Food Glorious Food will draw from Museums Sheffield’s collections of Social History, Visual Art and Decorative Art as well as loans from the V&A Museum of Childhood and The Museum of Brands. Budding cooks of all ages will enjoy our eclectic displays of labour saving gadgets, historic culinary devices and unusual recipes, before delving into our larder, stocked with interesting food stories and nostalgic packaging. Little green fingers will be kept busy in our vegetable patch play area, while the Food Forum will showcase archive footage from the British Pathe archive and allow visitors to share their own food likes, dislikes, recipes and memories.
Food Glorious Food is created in association with the University of Sheffield and will tour to the V&A Museum of Childhood, London, in 2011. The exhibition is supported by the Esmée Fairbairn Foundation and Sheffield – Let’s Change4Life, a city wide programme focused on addressing overweight and obesity in children and families.

Wed 24th Feb 10 Restaurants need new deals to keep their slice of the cake
As usual, the new year has brought a profusion of sales to the high street and restaurants have joined the shops and stores offering discounts. You can find deals such as two for one at Café Rouge; main courses for £7 and kids eat half price at Pizza Hut; half-price vouchers at PizzaExpress; and second main meal for just £1 at Zizzi.
These deals have become an accepted and reliable way for mid-spend restaurants to build consumer traffic in quiet times. But they have now been around for more than 12 months and their currency is in danger of becoming debased.
Restaurant chains have got themselves into a tight corner over discounting that is likely to be difficult and time-consuming to get out of. And with so much competition on the high street between broadly similar outlets, it would take a brave operator to put an end to price promoting when the competition continues to discount.

Thu 11th Feb 10 City working up appetite for first food extravaganza
NATIONAL festivals supremo Phil Jones has been drafted in to run Sheffield's first food extravaganza, in a bid to put the city on the culinary map.
Jones, aged 53, is the man behind the UK's biggest annual celebration of food and drink, in Manchester. He has built it up over the last 12 years and also runs successful events in Greenwich, Richmond, Southport and Nottingham.
But Sheffield's scope eclipses all these, he says, adding: "This is our key event now.
"Rome wasn't built in a day and the truth is it's going to be hard work and a long-term project. But the potential to develop into something really big and on the national stage is superb."

More than 30 catering establishments came together last week to celebrate healthy eating at the first annual Healthy Choices Award Ceremony. The Healthy Choices award ceremony, funded by the Sheffield Let’s Change4Life Programme, saw winners from across the city including:
● ‘Best Healthy Food establishment’ went to Homemade, who not
only offer healthier menu items but also healthier cooking methods used during preparation
● ‘Most breastfeeding friendly establishment’ was awarded to
Nonnas for their pro-active promotion of a breastfeeding policy and welcoming environment
● The award for ‘Sourcing food locally’ was presented to
Silversmiths, who actively support the local economy by sourcing 70% of ingredients from Sheffield
● ‘Fairtrade’ award went to Sharrow’s new Fair-trade coffee

Street project, who are visited by 1500 people each week, are involved in local food initiatives, and provide work experience for people with learning difficulties
● And finally the ‘Most Inspiring Award’ was presented to
Nonnas, who showed high achievement in all of the award categories
Carol Weir, NHS Sheffield’s Programme Director for the Sheffield-Let’s Change4Life Programme said: “The ceremony was a phenomenal success and demonstrates how important the healthy eating agenda is to local businesses. All the winners and shortlisted entries are already achieving so much by contributing towards offering healthier alternatives to the people of Sheffield.”
Siobhan Horsley, Food Programme Manager at Sheffield Wildlife Trust who runs the Healthy Choices programme said: “We’ve had nothing but positive feedback from all the participating establishments and I’m sure that the award ceremony will grow from strength to strength as more caterers become Healthy Choice Award accredited”
Trudi Coleman from award winning Nether Edge café Homemade said: “We were delighted to win the award for Best Healthy food establishment in Sheffield and to be a part of an exciting new initiative that can only benefit the people of the city.
“We have always endeavoured to source and use local produce and offer unusual fresh salads, homemade soups and warm dishes of the day that challenge conventional ideas about vegetarian cuisine. We as owners, prepare, cook and serve all our own food, and therefore know exactly what each dish contains. This is an important aspect of offering people healthy food choices.”

Wed 20th Jan 10 Terre di Puglia- Nonnas Extra Virgin Oil is here...
When the owner of Nonnas restaurant in Sheffield and Chesterfield, Gian Bohan first tasted it, he knew this was the perfect Extra Virgin Olive oil to represent Nonna’s love for authentic and high quality food sourcing. Now after eagerly and patiently waiting for nature to do its part, the second harvest of Nonnas Puglian Extra Virgin is finally here.
“Terre di Puglia” is a testament to the Rubini Family, owners of a four hectare olive grove donated to their ancestors by a feudatory (Countess Siciliano) in the middle ages. Since then, generations of Rubinis have been lovingly growing olives and handing down the grove and the knowledge to their successors. This olive oil they produce exclusively for Nonnas is a family matter rooted in tradition, history and pure passion for the land and its produce. This year Mimmo Rubini (the son of the producer and also a waiter at Nonnas) and his family were helped by Nonnas customers who went to Puglia to pick the olives and following all the steps of making Terre di Puglia.
Sveglia! at 7am for the traditional breakfast with the local pickers at the caffe’ before dedicating the day to the harvest using both traditional “Mazzaridd”- a wooden stick with a comb shaped top which shakes the branch without hurting the plant and a somewhat more technological instrument called “Squotitore” a motor run stick with a clap which shakes the tree and makes olives fall.
After a hard days work, the olives are transported to the local mill for the “molitura” in a cave like underground stone mill. “What strikes you the most,” observes Mimmo, “is the heady smell of all the different types of olives being milled, so mesmerising you can almost taste the flavours of the olive oil to come. It is a quite unique sensory experience. One I am glad we could share with our customers so they would see how much love and dedication goes into the making of our olive oil.” It is often said “I wish I could bottle that experience,” well we think the Rubini family managed to do just that and capture in this exceptional Extra Virgin the smells, the pride and the passion and the love for their land. The proof is in the taste.

Tue 12th Jan 10 Copthorne’s new head chef gives Sheffield a taste of South Africa
Sheffield is set for a flavour of South Africa, with the appointment of a new Head Chef at one of the city’s most luxurious hotels.
South African born Ernst Van Zyl, 32, who now lives in Manchester, has taken control of the kitchen at The Copthorne Hotel Sheffield, based on Bramall Lane.
Ernst will oversee the Copthorne’s 100 seater 1855 restaurant and bar, carrying on the excellent work of his predecessor’s menu, which has been built on a core of seasonal, locally sourced ingredients.
With more than a decade’s hospitality experience, Ernst has worked in the kitchens of many high profile AA Rosetted hotels, including the five star Hilton Hotel on Park Lane, London. He joins the Copthorne from Prima Hotels, where he was the executive chef for six hotels across the UK.
Ernst said: “I’m delighted to be working at the Copthorne Hotel. It is a great company with a fantastic reputation and Sheffield is an up-and-coming city which I like very much.
“I love a new challenge and am anticipating the role will test my experience in food and beverage. In South Africa we often barbeque our food, whether sun, wind or snow. I hope to adapt some of these influences into the existing menu at the Copthorne.
“The previous head chef, Daniel James’ menu obviously works extremely well, and I believe that if something works then don’t change it, but every chef likes to make a few minor adjustments! He has done an excellent job here, with the hotel being awarded an AA Rosette and the various restaurant accolades achieved under his guidance, so I’m looking forward to carrying on where he left off.”
Orla Watt, general manager of the Copthorne Hotel Sheffield, declared: “1855 has now been established as a leading name in the city for delivering good quality, modern food at affordable prices. We are delighted to have Ernst on board, especially as our previous Head Chef, Daniel James, played a major part in choosing Ernst as his successor.
“We are looking forward to working with Ernst to sampling some new, fresh ideas to get 2010 off to a great start.”
The Copthorne Hotel Sheffield has also appointed Jonathan Williams to the kitchen as Ernst’s right hand man. Previous to his new chef role at Copthorne, Jonathan spent a month at Heston Blumenthal’s acclaimed restaurant, The Fat Duck.

Sun 10th Jan 10 Walnut Live- a new cabaret venue for Sheffield
Sheffield’s entertainment scene gains an exciting addition in the New Year with the arrival of the city’s first contemporary cabaret and dining venue.
Walnut Live opens on January 15 after refurbishment of the former Walnut Club Champagne Bar and Grill in Ecclesall Road. This is after the City Council granted us a live entertainment license in December 09.
Founder Richard Mills aims to mix cabaret styles from the Moulin Rouge and the jazz speakeasys through to modern-day equivalents, combined with quality dining to create a new experience in the city.
The venue will open from noon until 12.30pm from Wednesdays to Sundays, offering a mix of live music, comedy and theatre. There will also be theme nights with tribute acts celebrating the likes of Motown, soul and the sounds of the ‘80s & decades.
"We have been staging live jazz and swing to packed houses at the Walnut Club Hathersage for the past five years," Richard says. "We decided that the time was right for live entertainment on a much wider scale at our Sheffield venue – and we want to encourage local talent. We hope to get a couple of headline legends of past pop each month; I’m particularly looking forward to a couple of tribute acts I’ve personally seen before as Blondie and Rolling stones, they are amazing!"
Walnut Live's regular attractions will also include regular Live Thursday, Friday and Saturday showtimes, Thursday nights will be called Walnut JAM with open mic spots with MC Ryan Taylor. Sunday and Wednesday’s will be developed into live comedy, performance and dance nights.
Theme night audiences will be offered a three-course meal from the Michelin-rated kitchens for £20 per head. A variety of other offers will include a £5-£10-£5 three-course menu and a £11.95 two-course daytime menu.
Alongside the transformation of the Sheffield venue, the Walnut Club restaurant in Hathersage is being refurbished and rebranded as the Walnut Club Brasserie, opening from Wednesdays to Sunday lunchtime.
"We want to create more of a friendly, homely atmosphere while preserving our reputation as a venue for quality dining," says Richard.
The brasserie will focus on European and British cuisine, using local suppliers, and will introduce a £5-£10-£5 menu alongside a range of special offers. There will be more special food events like the recent wild mushroom hunt and the established jazz and swing evenings will continue on Fridays and Saturdays.

Thu 7th Jan 10 Value for money, the holy grail for eateries, by Martin Dawes, the Star
A couple of weeks back a local restaurant boss looked at his tinsel decorations and shook his head sadly. "Christmas used to last four weeks, now it's down to just two."It's what is going to happen in January which worries me."
He wasn't the only one. It's been a belt-tightening year for customers as much as eateries yet new ones still open up in a city which has far too many restaurants. With a credit crunch on, I spent this year looking even more acutely than normal to find real value for money in the less glamorous places. It was often to be found in places which were more cafes than restaurants.

It's a long wait for my liver and mustard fried potatoes but, sitting over my glass of Empire bitter in the Rutland Arms on Brown Street, Sheffield, I wasn't in a mind to complain. After all, any pub chef who can take the time and effort to make his own baked beans, rather than open a can, gets a Brownie point or two. And Paul Hil, who may have only one 'L' to his name, has earned several Brownie points from me.

Thu 7th Jan 10 Spice Market Cafe reviewed by Lesley Draper
SO the season of merrymaking is in full swing and most of us have chomped our way through enough mince pies and turkey dinners to weary even the liveliest of palates.
If you're longing for a meal that's guaranteed to spark the tastebuds, then the latest arrival in Ecclesall Road is right up your street – and the 'no reservations' policy means it won't be booked up.
Spice Market Café is the eagerly awaited new offering from BrewKitchen, the Sheffield group that includes Artisan, Canteen and the Cricket Inn at Totley.
Master Chef Richard Smith is the culinary force behind it and, once again, he seems to have hit upon the perfect ingredient to round off the company's offer. The Spice Market borrows elements from each of the other outlets but is, essentially, different from all of them.
"An exciting mix of the fantastic cuisines of Asia with the British love affair with spices," burbles the publicity leaflet. "Let us take you on a journey of cooking through Thailand, India, Sri Lanka, Vietnam, Cambodia, China and Malaysia, all with a great British take."

Thu 31st Dec 09 Top of the menu for eating out 2009, Lesley Draper, the Telegraph
No doubt 2009 will go down in history as a year of doom, gloom and banking disaster. Sheffield's pubs and restaurants have taken a hammering like everyone else – but the result has been an unexpected win for their customers.
While one or two old favourites have caved in under the pressure, most have adapted to the tougher market with resilience and imagination. And that has meant greater choice and better quality at the budget end of the scale.
Chef Richard Smith began the year by closing his acclaimed fish restaurant Catch but swiftly reopened it as Canteen, a back-to-basics version of neighbouring Artisan. Likewise Cary Brown was back in town with the new Mini Bar, offering pared down, tapas-style versions of his old Slammers favourites.

... Head chef Abdrabou Achnatih is a Latino who worked for many years in the Canary Islands – all of which adds up to the perfect recipe for a Latin American restaurant 'with a European twist'. "We're passionate about our food; that's what you need for success of a restaurant," says Francisco. To ensure they got the recipe right the Mama Mia team started out with a lengthy menu then gradually refined it to feature a broad range of both dishes and prices. The accent is on authenticity: where else in the city can you get paella for one, made with real paella rice? Pasta and pizza were banned until they gave in to perceived demand and settled on a token two of each. "But people don't ask for them – in four weeks we've only sold ten…"

Thu 3rd Dec 09 Martin Dawes reviews Crucible Corner
The stage is set for a promising newcomer
... The new theatre restaurant, the Crucible Corner, is a little cracker.
It is not in the theatre itself but opposite and at first it looks unpromising as you pick your way through a building site to get to what was Ruskins wine bar in Tudor Square, a brave idea that never got off the ground.
Now renamed and redressed – the white walls are broken by giant black and white photos of Famous Crucible Thespians (Derek Jacobi, Kenneth Branagh et al) – it serves both the Crucible itself and the next door Lyceum, as well as the Library Theatre rather better than its predecessor Eat.
We decided to go early for a theatre tea (without the theatre) although the place is open from 9am for breakfast with last orders at 8pm.
So far, according to executive head chef David Wilson, the trade is mainly sandwiches and salads at lunchtimes and people get their teeth into something more substantial in the evenings.

Mon 2nd Nov 09 Milestone appeal to 'bring your own food'
Don't let your home-grown produce go to waste' is the call from Sheffield gastro pub The Milestone, in its latest initiative of trading food and drinks in exchange for customers surplus, home grown goods!
The Milestone is firmly committed to championing local produce from the Yorkshire region and the gastro pub owners see this as another way to highlight their passion to cook local products and truly home grown food. So far customers have brought in a mixture of delights from their own home, including pheasants, eggs and a whole range of root vegetables.
Owner of The Milestone, Matt Bigland commented,
"Quite a few of our regulars have exchanged their produce for food and drink, it's been great fun!
"After a little bit of negotiation with our new ‘suppliers' our Head Chef is then given the challenge of producing and serving up a delicious dish. So far, we've had rhubarb, which was used to make a rhubarb crumble and another customer bought in pears, which we poached in cinnamon and used on our belly pork dish on the Gastro menu."
The Milestone Head Chef, Simon Ayres said:
"I'm always up for a challenge and we like to keep things interesting so this is a great way to demonstrate our passion for the ‘home grown' concept. What I would really like someone to bring in are the more unusual root vegetables, like white beetroot and winter beets, they're both in season and really colourful and I've got some new dish ideas I'd like to develop using those ingredients. "
The Milestone recently received a recommendation in the 2010 - Michelin Guide to eating out in pubs and is the only gastro pub in Sheffield to receive a recommendation, earning a reputation for producing fine dishes from locally sourced produce.
The gastro pub and restaurant menus have been deigned to emphasise the Milestone's passion for interesting food with Yorkshire twists on classic dishes, and with the emphasis firmly on locally sourced produce, the ‘bring your own' concept allows them to source suppliers right down to grass roots level.
Located at the edge of the city centre, in the heart of Sheffield's Industrial past, the gastro pub and restaurant has become firmly established as the culinary gem in the Kelham Island area.

... Handmade is a small chain based in the Midlands and Meadowhall, its fourth restaurant, is the first in the north and it prides itself on going back to basics. The burgers are all handmade on the premises from traditionally reared, grass-fed fully-traceable beef, or so the claim goes. Its chips don't spill out of a packet but are double fried on the premises. And the buns are made of sourdough by local bakeries.
That's the claim and judging from the taste it works.

Simple pleasures and an authentic taste of Persia
The food here is rustic rather than refined, but portions are generous and there's no question about its authenticity. Spicing is surprisingly subtle and the accent is on simplicity. The menu sounds terribly exotic: dishes include chelo khoresh gheymeh, zereshk polo ba morg, and baghali polo ba mahi. The reality is somewhat more prosaic: lamb stew, chicken leg and fried fish!

IT'S always nice to visit an old friend and that's what it felt like going back to Portofino on London Road, Sheffield.

Wed 9th Sep 09 A Michelin Milestone for Sheffield Restaurant
Sheffield gastropub The Milestone has been awarded a prestigious Michelin-recommendation in the latest Michelin guide to eating out in pubs 2010.
The Milestone is the only Sheffield gastro pub to have received a recommendation in the 2010 guide and owners Matt Bigland and Marc Sheldon are attributing the recognition to their ongoing commitment to championing local producers in Yorkshire and ever changing menus to compliment seasonal choices.
Owner of The Milestone, Matt Bigland said: “We’re all delighted with the acknowledgement and it is a credit to the entire team, from the chefs in kitchen, to front of house, also our superb suppliers who provide amazing quality produce.
“We’ve had an amazing year, our profile and reputation has continued to grow and this really is the cherry on top of the cake.” The Milestone Head Chef, Simon Ayres said: “We have a great line-up of talented chefs who have been very responsive to my demands. They have risen to every challenge and this recommendation is a just reward for their efforts. “I’m delighted with the new menus we have just launched and how The Milestone has continued to innovate in order to keep new and old customers coming back.”
The Milestone launched three new menus in September, created to reflect their enthusiasm for good food with a flavour of Yorkshire. The menus are for the three dining offers at the Milestone – the downstairs gastro pub, upstairs restaurant and the popular Early Bird menu. The dishes have been deigned to emphasise the Milestone’s passion for interesting food, featuring modern twists on classic dishes, such as potted beef with mustard pickle and homemade crumpets.
The gastro pub is located in the heart of Sheffield’s Industrial past and in-keeping with the spirit of the Kelham Island area, the Milestone offer a range of local ales, continental lagers, a carefully selected wines list and a creative cocktail menu. The Milestone is continuing to target a new breed of visitor to sample the local ales that pass through on Sheffield’s ‘real ale trail’ in the ever changing Kelham Island area.

Tue 8th Sep 09 Zagat finds cost of eating out falls for first time in 14 years
The cost of fine dining in London has fallen for the first time in 14 years as restaurateurs attempt to buck the recession, according to new findings published today. The average meal now costs just 0.4 per cent less than last year, down from £40.55 to £40.39, according to the latest Zagat London Restaurants survey. But fewer people are eating out with the number of meals consumed outside the home down from 2.5 meals a week last year to 2.2 this year and, when they do, diners are leaving smaller tips.

Sat 5th Sep 09 Restauranteurs tempt diners with smaller dishes and smaller prices
Dining out is turning minimalist as the demand for small plates of food is on the increase. Half-size dishes at half the price are the latest trend as diners become more concerned about price and their waistlines.
The Spanish tapas style of eating is being adopted by other cuisines as the appetite for light bites takes over from the traditional main course of meat and two veg. New restaurant openings in London and around the country reflect the fashion for small plates and mix-and-match tastes. Bigger portions have already been linked to obesity in the United States, where plates tend to be overloaded.

Wed 2nd Sep 09 All-Siam reviewed by Martin Dawes
... Sukhothai means Dawn of Happiness and is the old capital of Thailand. Our own meal dawned happily with the arrival of the Pearls of All-Siam, a big selection of starters. Every one was a beauty. Instead of Chinese prawn toast it was minced chicken, instead of the usual spongy Thai fishcake it was juicy prawn with a crispy coating and there were little pastry baskets holding diced chicken and vegetables with a hit of fresh coriander.
All of the food tasted fresh, not tired: little wan ton 'bags' of juicy pork and prawn, big prawns deep-fried in pastry and, wait for it, 'An awakening of Thai fruits salad melded with dried shrimp, roasted coconut and crushed peanut.'

Authenticity and an all-in package is a Plaza delight
...The look is chic and contemporary, with lots of dark wood, high-backed leather chairs, stylish glasses, decanters and brushed-steel cutlery. Framed prints on the matt black walls offer the only hint of the restaurant's Indian provenance. The food, on the other hand, is the real thing.
"What's this? It's amazing," enthuses my companion as we're presented with a complimentary dish of bhel puri – a traditional Indian snack that looks a bit like Bombay mix but tastes like a spicy salsa packed with puffed rice, chickpea noodles, onion, tomato, cucumber and coriander.

Mon 24th Aug 09 Crisis hits restaurants as diners decide to stay home
Restaurants are closing at the fastest rate in decades as people economise on eating out during the recession, industry figures reveal.
Data given to The Independent shows the recession has badly bruised food outlets, with diners spending £330m less on sit-down meals and takeaways in the first half of this year. In the £19bn-a-year sector – whose margins average 5 per cent – independent restaurants have been worst affected, while branded groups have lured customers with half-price offers that have hit profits.

Mon 10th Aug 09 @ 09:00 Michelin starred Chef Hotel on Yorkshire culinary map
Michelin starred Chef Daniel James is on a Yorkshire culinary mission to make Sheffield’s newest four star hotel one of the region’s most talked about gastronomic hotspots.
The recently appointed head Chef at the Copthorne Hotel, based next to Sheffield United’s Bramall Lane football stadium, will oversee the hotel’s 100 seater 1855 restaurant and bar, including the launch of a modern new menu built on a core of seasonal, locally sourced ingredients.
Multi-award winning Daniel has earned three AA rosettes during more than a decade’s hospitality experience across the UK at high class venues in Wales, London and Cambridge. He joins from the Copthorne Hotel Cardiff and also worked for two years at one of Wales’ most renowned country hotels, Llangoed Hall in Brecon.
Daniel, from Brecon, Powys, said: “Food is in my blood. My grandfather was a baker and I have some very fond childhood memories of cooking at home at the weekends. So you could certainly say food is a life long passion of mine.
“I have been fortunate to have won some of the industry’s top awards during my career. But I don’t cook for accolades, I cook because I love food and because I’m ambitious. Sheffield represents a new challenge for me, but I’m lucky to have joined a fantastic new hotel which is serious about becoming a major player in the Yorkshire culinary circuit.”
“Yorkshire is home to some really unique flavours and dishes, from its world famous puddings to some well-loved cheeses, sauces and sweets. So why buy European, when the quality and variety is here on our doorstep? I am always on the look out for good quality local suppliers and I’m proud that seasonal, Yorkshire ingredients will form the heart of my menus here at the hotel,” said Daniel.
Orla Watt, general manager at the Copthorne Hotel Sheffield, said: “Our vision is to make the restaurant here a leading name in the city for delivering good quality, modern menus at affordable prices. Daniel’s appointment is a major part of that process and we look forward to showcasing his talent to our valued business and leisure guests following the launch of our new menu in May.”

Wed 15th Jul 09 Hard-up Britain loses its appetite for eating out
It has been one of Britain’s most successful industries for the past four decades, but the recession has finally brought the phenomenal growth in informal dining to a halt.
A report published yesterday by Allegra Strategies, the analysts, revealed that the amount Britons spend on informal eating out — where a meal costs £15 or less — has fallen for the first time in 40 years.
The research, Eating Out in the UK 2009, reveals that 15,000 jobs have been lost in the sector in the past year and warns that the trend could continue as one in five people plan to eat out less during the next 12 months.
